Why a cutting board made of end-grain wood?
With a regular cutting board, you see the length of the wood fibers. With an end-grain cutting board, you see the ends of the fibers. This creates a unique pattern and a very strong surface that wears less quickly.
Moreover, the wood fibers partially recover after cutting, making an end-grain board popular with both home cooks and professionals.
